The loading is the hardest part

I have a hard time believing it myself, but loading is the worst part of this diet.
This is my third round, and this time around I had a list of everything I wanted.
I was so excited to try new things, savor old favorites and basically just pig out. Then one pumpkin walnut muffin into loading breakfast day 1, I was already over it!
I made it out alive though, and I must have done something right because I'm  up 5 lbs Loading has officially ended for me and the next load for me is Christmas eve and Christmas day.  So until then I'll be happy with my clean eating!

HCG Phase 2- Mustard Chicken

Mustard-Glazed Chicken Breasts

ingredients:
4 Chicken Breasts (approximately half a chicken breast is a 3oz cooked serving)
Salt
Ground black pepper
large onion, cut into thin wedges
1  1/2 tablespoons Dijon-style or spicy mustard
1/4 cup water
tablespoon paprika
1 teaspoon stevia (for an added flavor alternatively add 10 drops of orange flavored stevia liquid)
1/2 teaspoon ground nutmeg
Fresh sage leaves (optional)

directions:
1. Season chicken with salt and pepper. In a 12-inch skillett cook chicken and onion on medium-high heat. Cook for 6 minutes; turn chicken and onions. Cook for 6 minutes more.

2. Meanwhile, in a small microwave-safe bowl combine mustard, stevia, the water, paprika, and nutmeg. Heat in microwave on 100 percent power (high) for 1 minute or until melted. Pour over chicken in skillet. Reduce heat to medium. Cook, covered, for 10 minutes or until chicken is cooked through.

3. Divide chicken and onion mixture among serving plates. If desired, top with sage

HCG Phase 3- Pumpkin Turkey Chili






Ingredients:1 tablespoon vegetable oil
1 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped yellow bell pepper
1 clove garlic, minced
1 pound ground turkey
1 (14.5 ounce) can diced tomatoes
2 cups fresh pumpkin pureed
1 1/2 tablespoons chili powder
1/2 teaspoon ground black pepper
1 dash salt
1/2 cup shredded Cheddar cheese


Directions:
Heat the oil in a large skillet over medium heat, and saute the onion, green bell pepper, yellow bell pepper, and garlic until tender. 
Stir in the turkey, and cook until evenly brown. 
Drain, and mix in tomatoes and pumpkin. Season with chili powder, pepper, and salt. 
Reduce heat to low, cover, and simmer 20 minutes. Serve topped with Cheddar cheese.

HCG Phase 2 -Lemon Rosemary Chicken

Ingredients:
100g chicken
1/2 t rosemary 
1-2 cloves minced garlic
1/2 lemon
1/4 tsp black pepper


Directions:
Heat non-stick pan over MED-HI heat.
In small bowl, grate lemon peel. Add lemon juice, rosemary, pepper, and garlic. 
Toss in chicken.Place chicken in skillet.
 Cook 5 mins brushing with remaining juice mixture.
Turn over chicken and cook 5 more mins or until juices run clear.

HCG Phase 2 - Shrimp and Asparagus Stir Fry

Ingredients:
100g shrimp (shelled & deveined)
1-2 cloves minced garlic 
1 Tbsp fresh ginger
Braggs Liquid Amino
4oz asparagus 
    1. Add shrimp, garlic, and ginger into pre-heated pan. 
    2. Stir fry for 3-5 mins. (If needed, add small amount of water or lemon juice)
    3. While that cooks, Cut asparagus into 2" pieces.
    4. Remove shrimp from pan and add asparagus. Drizzle with a bit of Bragg Liquid Amino
    5. Stir fry for 2-3 mins. 
    6. Re-add shrimp to pan and heat for 1 minute to heat through.
    7. Serve.






  • Phase 2- Cinnamon Baked Apples

    Cinnamon Baked Apple
    (Yes, a dessert!)

    Mix the following in a small baking dish:

    1 Tbsp water
    1/2 tsp cinnamon
    1/2 tsp stevia

    Juice of 1/2 lemon (optional)

    Core an apple. Slice apple and coat in cinnamon mixture. Bake, covered, at 350 for 10-15 minutes or until desired doneness.
