HCG Phase 2- Mustard Chicken

Mustard-Glazed Chicken Breasts

ingredients:
4 Chicken Breasts (approximately half a chicken breast is a 3oz cooked serving)
Salt
Ground black pepper
large onion, cut into thin wedges
1  1/2 tablespoons Dijon-style or spicy mustard
1/4 cup water
tablespoon paprika
1 teaspoon stevia (for an added flavor alternatively add 10 drops of orange flavored stevia liquid)
1/2 teaspoon ground nutmeg
Fresh sage leaves (optional)

directions:
1. Season chicken with salt and pepper. In a 12-inch skillett cook chicken and onion on medium-high heat. Cook for 6 minutes; turn chicken and onions. Cook for 6 minutes more.

2. Meanwhile, in a small microwave-safe bowl combine mustard, stevia, the water, paprika, and nutmeg. Heat in microwave on 100 percent power (high) for 1 minute or until melted. Pour over chicken in skillet. Reduce heat to medium. Cook, covered, for 10 minutes or until chicken is cooked through.

3. Divide chicken and onion mixture among serving plates. If desired, top with sage

HCG Phase 3- Pumpkin Turkey Chili






Ingredients:1 tablespoon vegetable oil
1 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped yellow bell pepper
1 clove garlic, minced
1 pound ground turkey
1 (14.5 ounce) can diced tomatoes
2 cups fresh pumpkin pureed
1 1/2 tablespoons chili powder
1/2 teaspoon ground black pepper
1 dash salt
1/2 cup shredded Cheddar cheese


Directions:
Heat the oil in a large skillet over medium heat, and saute the onion, green bell pepper, yellow bell pepper, and garlic until tender. 
Stir in the turkey, and cook until evenly brown. 
Drain, and mix in tomatoes and pumpkin. Season with chili powder, pepper, and salt. 
Reduce heat to low, cover, and simmer 20 minutes. Serve topped with Cheddar cheese.

HCG Phase 2 -Lemon Rosemary Chicken

Ingredients:
100g chicken
1/2 t rosemary 
1-2 cloves minced garlic
1/2 lemon
1/4 tsp black pepper


Directions:
Heat non-stick pan over MED-HI heat.
In small bowl, grate lemon peel. Add lemon juice, rosemary, pepper, and garlic. 
Toss in chicken.Place chicken in skillet.
 Cook 5 mins brushing with remaining juice mixture.
Turn over chicken and cook 5 more mins or until juices run clear.

HCG Phase 2 - Shrimp and Asparagus Stir Fry

Ingredients:
100g shrimp (shelled & deveined)
1-2 cloves minced garlic 
1 Tbsp fresh ginger
Braggs Liquid Amino
4oz asparagus 
    1. Add shrimp, garlic, and ginger into pre-heated pan. 
    2. Stir fry for 3-5 mins. (If needed, add small amount of water or lemon juice)
    3. While that cooks, Cut asparagus into 2" pieces.
    4. Remove shrimp from pan and add asparagus. Drizzle with a bit of Bragg Liquid Amino
    5. Stir fry for 2-3 mins. 
    6. Re-add shrimp to pan and heat for 1 minute to heat through.
    7. Serve.






  • Phase 2- Cinnamon Baked Apples

    Cinnamon Baked Apple
    (Yes, a dessert!)

    Mix the following in a small baking dish:

    1 Tbsp water
    1/2 tsp cinnamon
    1/2 tsp stevia

    Juice of 1/2 lemon (optional)

    Core an apple. Slice apple and coat in cinnamon mixture. Bake, covered, at 350 for 10-15 minutes or until desired doneness.

    HCG Diet Phase 2- Buffalo Chicken

    Ingredients:

    100g chicken breast cut into tenders
    ¼ c vinegar
    ¼ c water
    1-2 Tbsp Cayenne Pepper
    1-2 Tbsp Chili Powder (adjust as needed)

    Directions:

    1. In small bowl, mix vinegar, water, and cayenne pepper.


    2. Add chicken to marinade and refrigerate for 1-2hrs.

    3. Preheat oven to 350 Add chili powder to a small dish and dip chicken in chili powder.

    4. Place on rack in baking pan.

    5. Bake 15-20 mins turning halfway through.

    6. Serve immediately with some  Frank’s original red hot sauce.

    Makes 1 serving

    You read that right! Franks original red hot sauce is a-ok on hcg!!!

    Phase 3 - Cauliflower Crust Pizza

    Ingredients:
    1 cup riced cauliflower (cooked in microwave)
    1 cup shredded mozzarella cheese (not pre shredded, that has carbs to prevent caking)
    1 egg, beaten
    1 tsp dried oregano
    1 tsp dried basil
    1/2 tsp garlic salt
    1/2 tsp onion powder
    pizza sauce, shredded cheese and your choice of toppings*

    Directions:
    To "Rice" the cauliflower:
    Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks.
    Add to food processor and pulse until it looks like grain. Do not over-do the pulsing or you will puree it. Place the riced cauliflower into a microwave safe bowl and microwave for 8 minutes.
    There is no need to add water, as the natural moisture in the cauliflower is enough to cook itself.
    One large head should produce approximately 3 cups of riced cauliflower.
    The remainder can be used to make additional pizza crusts immediately, or can be stored in the refrigerator for up to one week. (i have made small "crusts" and used them as hamburger buns- amazing!)

    To Make The Pizza Crust:
    Preheat oven to 450 degrees. Liberally spray a cookie sheet with non stick cooking spray.
    In a medium bowl, stir together 1 cup cauliflower, egg and 1 cup mozzarella. Add spices.
    Transfer to a cookie sheet, and using your hands, pat out into a 9" round.

    Bake at 450 degrees for 15 minutes. The edges will be brown.
    Remove from the oven. To the crust, add sauce, toppings and cheese.
    Place under a broiler just until cheese is melted (approximately 4-5 minutes).

    *Note that if you don't like crisp vegetables or raw meat on your pizza, then the toppings need to be precooked since you are only broiling for a few minutes.

    Official start of Phase 3- maintainence Today!

    Last round, when phase 3- maintenance came around, I was scared shitless!
    You can have whatever you want to eat (except sugar and carbs of course) and that frightened me!
    I was absolutely positive I would gain all the weight back if I had some cheese or avacado.
    Boy was I wrong! I actually lost two pounds and ate like a queen. After being on the VLCD (very low calorie diet) for 45 days, at first my taste buds didn't know what to make of the food and it wasn't as spectacular as I had imagined. After a few days that changed, but it wasn't junk that was amazing, it was home made omelettes with onion, tomato, bell pepper, mushrooms and some sharp cheddar. My appreciation for simple, home made meals has sky rocketed. That's what's so amazing about this diet, it's like a quick fix, but with long term physical and metal effects.
    I do have to admit that phase 3 does get a little nerve wracking if you are planning on doing another dropping phase, cuz it feels kinda like limbo for a while. Though it is important to have this resting phase after dropping for at least 3-6 weeks so your body doesn't get used to the hcg.
    The absolute hardest part about the entire diet is that period of 72 hours where you are off the drops but still have to stick to the VLCD, ugh, my tummy hurt the 3rd day, I cannot lie.
    But the results far exceed the one or two days of discomfort!

    HCG Phase 2- Beef Stuffed Baked Tomatoes

    Baked Stuffed Tomatoes

    Ingredients:
    l b. extra lean ground beef
    4 large. tomatoes
    1 med. onion, chopped
    2 stalks celery, chopped
    2 cloves of garlic, minced
    1 Tbls cumin
    1/4 teaspoon garlic powder
    1/4 teaspoon onion powder
    Cayenne pepper to taste

    Salt and pepper to taste
    Fresh Parsley
    4 pieces of Melba toast- crumbs

    Directions 
    Hollow out the tomatoes (save the insides to cook with the beef)sprinkle with salt and turn upside down to drain
    for 10 minutes. Brown ground beef in a small frying pan (no oil) with the inside meat of your tomatoes; add onion, garlic and spices. Pack ground beef mixture into tomatoes, add small amount of
    water to bottom of dish, top with Melba toast crumbs and salt, and bake in
    350 degree oven for 20 minutes. Garnish with fresh parsley and serve.

    Makes 4 servings

    HCG Phase 2 Sweet Hot Chili

    Ingredients:
      1 Pound 95% Lean Ground beef
      4 cloves Garlic Minced
      1 White onion chopped
      1 Yellow Onion Chopped
      3 Stalks of celery Sliced Thin                                                                                                         1 can of tomato paste (no sugar or "natural flavors")
      2 chopped tomatoes
      1 Tsp. Salt
      1/2 Tsp. Pepper                                                                                                                               1 Tbls Onion Powder                                                                                                                      2 Tbls.  Paprika
      1 Tsp. Garlic Powder
      2 Tbls. Chili Powder
      1 Tbls. Cumin
      1 Tsp. Oregano
      1 Pinch Cayenne Pepper
      1 Pinch Red Pepper Flakes                                                                                                               Dash of Tabasco Sauce(to taste)                                                                                                     2 Cups water
      1 lemon
      4 Packets Stevia Natural Sweetener (Optional)


    Directions:

    Brown Ground Beef without oil, rinse off in hot water and and set asside. Saute garlic and onions without oil until soft. Put rinsed beef in a large pot and squeeze juice of lemon over mixture. Add all ingredients to pot. Bring to a slow boil. Reduce heat and simmer uncovered for 30 minutes to reduce broth. Divide into 8 equal servings, approx. 2/3 cup each. Serve or refrigerate.

    Number of Servings: 8

    HCG Phase 2 Steak (or Chicken) pizzaiola recipe


    Steak (or Chicken) Pizzaiola


  • 100g steak (or chicken)
  • tomato (diced)
  • 2-3 cloves minced garlic 
  • 1 t oregano 
  • 1 t basil 
  • 1/4 t chili powder
  • 1/4 t onion powder
  • black pepper

    1. Preheat oven to 350. 
    2. Place 1/2 of the diced tomato in casserole dish.
    3. Add meat on top of tomato and top with minced garlic. 
    4. In small bowl, toss the rest of tomato with the oregano, basil, chili powder, onion powder and black pepper. Place on top of steak or chicken.
    5. Cover tightly with aluminum foil
    6. Bake 45-60 mins. 

    TIP: If using chicken, sear each side for a minute or two in a frying pan with a dash of salt/pepper (until just browned). Then follow with same steps as above.


  • HCG Phase 2 Crab Cakes recipe

    Krabby Patties (Crab Cakes)

  • 100g crab meat
  • 1 grissini (ground into powder)
  • 1 t parsley
  • 1/2 t tarragon
  • 1/2 t paprika
  • 1/2 t lemon juice
  • 1/4 t cayenne
  • 1/4 t white pepper
  • 1/4 t dry mustard
  • 1/4 t ground bay leaves
  • 1/4 t black pepper
    1. Grind grissini into powder and place into small dish.
    2. In bowl, combine crab meat and remaining ingredients. Mix well & form into patties.
    3. Coat each side of patty with grissini powder.
    4. Brown in non-stick skillet over MED heat for 3 mins each side, or place on George Foreman for 4-5 mins.
    5. Serve immediately.

    TIPS:
  • mix the patties and set them in the refrigerator for 1-2 hours or overnight as this helps the patties set.
  • place them on a non-stick baking sheet @ 350 for 10-15 mins. Then broil for 1-2 mins each side to brown.

    Hello world- first blog

    I started using  HCG drops on June 3rd, 2012. Since then my life has changed for the better. I honestly only dreamed I could ever feel and look this great!
    I am so amazed and just over the moon with my results. If I have to yell it from the rooftops to get one person to listen, it will be worth it.
    I plan on using this blog to post recipes, helpful hints and important information.
